Ingredients

  • 3 Tbsp. olive oil
  • 1 lb. ground beef
  • 1 large onion
  • 1/2 bell pepper
  • 4 stalks celery
  • 2 cloves garlic
  • 1/2 c. parsley
  • 1/2 c. scallions
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 c. rice

Method

  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef and all vegetables, except parsley and scallions.
  • Brown beef and then turn the heat to low.
  • Cook for about 45 minutes, stirring often.
  • Add 2 cups of water and bring to a boil.
  • Add rice and reduce the heat.
  • Cover and cook for 20 minutes.
  • Add green onion and parsley.
  • Cover and cook another 5 minutes.
  • Serves 4.
