- 3 Tbsp. olive oil
- 1 lb. ground beef
- 1 large onion
- 1/2 bell pepper
- 4 stalks celery
- 2 cloves garlic
- 1/2 c. parsley
- 1/2 c. scallions
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 c. rice
Method
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and all vegetables, except parsley and scallions.
- Brown beef and then turn the heat to low.
- Cook for about 45 minutes, stirring often.
- Add 2 cups of water and bring to a boil.
- Add rice and reduce the heat.
- Cover and cook for 20 minutes.
- Add green onion and parsley.
- Cover and cook another 5 minutes.
- Serves 4.
