Ingredients

  • 2 lb. small green beans
  • 1 tsp. cayenne pepper
  • 4 cloves garlic
  • 4 heads dill
  • 2 1/2 c. vinegar
  • 2 1/2 c. water
  • 1/4 c. salt

Method

  • Trim bean tips; pack lengthwise into 4 pint jars, leaving 1/4-inch headspace.
  • To each pint, put 1/4 teaspoon pepper, 1 clove of garlic and 1 dill head.
  • Combine remaining ingredients; bring to boiling.
  • Pour boiling hot over beans.
  • Adjust lids; process in boiling water bath for 10 minutes.
  • Let stand for 2 weeks before tasting to allow the flavor to develop.
