Ingredients
- 1 large eggplant
- 1 small onion
- 1/2 stick butter
- 1 c. canned milk
- 1/4 c. grated cheese
- salt and pepper to taste
Method
- Boil eggplant; drain and mash well.
- Add eggs to canned milk; beat well.
- Add butter, grated cheese and onion.
- Turn into greased casserole.
