Ingredients

  • 3 1/2 c. white vinegar
  • 3 1/2 c. water
  • 6 Tbsp. pickling salt
  • 4 lb. green beans, cleaned
  • 21 black peppercorns
  • 7 tsp. hot pepper flakes
  • 1 Tbsp. mustard seed
  • fresh dill
  • 7 cloves garlic

Method

  • Combine water, vinegar and salt in pan; bring to boil.
  • Pack beans in sterilized jars.
  • Divide remaining ingredients among jars.
  • Pour boiling liquid over, leaving 1/2-inch at top of jar. Seal jars.
  • Put in boiling water bath for 20 minutes.
  • Makes 7 pints.
