Ingredients

  • 1 1/2 c. sliced fresh strawberries
  • 1 3/4 c. flour
  • 1 c. sugar
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 5 ounce. cool corn oil
  • 2 Large eggs, beaten
  • 1/2 c. pecans, minced

Method

  • Preheat oven to 375 degrees.
  • Combine flour, sugar, cinnamon, salt and baking soda.
  • Add in oil and Large eggs.
  • Blend lightly.
  • Add in nuts and strawberries.
  • Blend till dry ingredients are just moistened.
  • Put batter into greased muffin c., filling them 2/3 full.
  • Bake 20 to 25 min or possibly till done.
  • Makes 1 dozen.
