- 1 pkg. slice and bake refrigerator sugar cookie dough, chilled firm
- 1 (8 oz.) pkg. low-fat cream cheese, softened
- 1/2 c. sugar
- 1 Tbsp. lemon juice
- 1/2 tsp. vanilla
- dash of salt
- 2 eggs or egg substitute
- 4 c. sliced fresh fruit
- 1/2 c. apple jelly
Method
- Spray large pizza pan or cookie sheet with cooking spray (or use nonstick pan).
- With very sharp knife, slice cookie dough into 1/4-inch slices.
- Starting at edge, line cookie slices around pan, overlapping slightly to make a pretty scalloped crust.
- Continue filling pan with slices to cover.
- Bake in a 375° oven for 6 to 8 minutes, until cookies are set, but not brown.
- Remove from oven. Set aside.
- Lower oven heat to 325°.
