Ingredients

  • 1 pkg. slice and bake refrigerator sugar cookie dough, chilled firm
  • 1 (8 oz.) pkg. low-fat cream cheese, softened
  • 1/2 c. sugar
  • 1 Tbsp. lemon juice
  • 1/2 tsp. vanilla
  • dash of salt
  • 2 eggs or egg substitute
  • 4 c. sliced fresh fruit
  • 1/2 c. apple jelly

Method

  • Spray large pizza pan or cookie sheet with cooking spray (or use nonstick pan).
  • With very sharp knife, slice cookie dough into 1/4-inch slices.
  • Starting at edge, line cookie slices around pan, overlapping slightly to make a pretty scalloped crust.
  • Continue filling pan with slices to cover.
  • Bake in a 375° oven for 6 to 8 minutes, until cookies are set, but not brown.
  • Remove from oven. Set aside.
  • Lower oven heat to 325°.
