Ingredients

  • 6 eggs
  • 1/2 tsp. onion powder
  • 1/2 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 c. frozen shredded hash brown potatoes
  • 1 c. (4-oz) shredded Swiss cheese
  • 1/2 c. diced fully cooked ham
  • 1/2 c. chopped green pepper
  • 1 medium tomato, thinly sliced

Method

  • Preheat oven to 350°.
  • In a large bowl, beat the eggs, onion powder, thyme, salt and pepper.
  • Stir in the potatoes, cheese, ham and green pepper.
  • Pour into a greased 9-inch pie plate.
  • Bake for 40 to 45 minutes or until a knife inserted near the center comes out clean.
  • Garnish with tomato slices.
  • Serves 6.
