Ingredients
- 6 eggs
- 1/2 tsp. onion powder
- 1/2 tsp. dried thyme
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 c. frozen shredded hash brown potatoes
- 1 c. (4-oz) shredded Swiss cheese
- 1/2 c. diced fully cooked ham
- 1/2 c. chopped green pepper
- 1 medium tomato, thinly sliced
Method
- Preheat oven to 350°.
- In a large bowl, beat the eggs, onion powder, thyme, salt and pepper.
- Stir in the potatoes, cheese, ham and green pepper.
- Pour into a greased 9-inch pie plate.
- Bake for 40 to 45 minutes or until a knife inserted near the center comes out clean.
- Garnish with tomato slices.
- Serves 6.
