Ingredients

  • Cooking spray
  • 1/2 pound turkey kielbasa sausage, sliced
  • 1 1/2 tablespoons olive oil
  • 2 cups chopped onion
  • 1 1/2 cups chopped green bell pepper
  • 3/4 cup chopped celery
  • 2 garlic cloves, minced
  • 2 1/2 cups fat-free, less-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 3/4 cup uncooked long-grain rice
  • 1/2 pound large shrimp, peeled and deveined
  • 1/2 cup chopped green onions

Method

  • Coat a Dutch oven with cooking spray; place over medium-high heat until hot. Add sausage; saute 4 minutes or until lightly browned. Drain on paper towels.
  • Add oil and next 4 ingredients to pan. Cook 8 minutes or until tender, stirring constantly. Add broth and next 5 ingredients. Bring to a boil; add rice. Return to a boil; cover, reduce heat, and simmer 22 minutes or until rice is tender.
  • Add shrimp and reserved sausage; cover and cook 3 minutes. Remove from heat; stir in green onions. Let stand 5 to 10 minutes.
