Ingredients

  • 23 cup dark cocoa
  • 1 12 cups sugar
  • 12 cup confectioners' sugar
  • 34 teaspoon salt
  • 1 teaspoon xanthan gum
  • 34 cup rice flour
  • 2 tablespoons potato starch
  • 2 tablespoons tapioca flour
  • 1 tablespoon espresso powder
  • 1 cup chocolate chips
  • 3 large eggs
  • 12 cup canola oil
  • 2 tablespoons water or 2 tablespoons coffee

Method

  • Preheat oven to 350F.
  • Mix all of the dry ingredients.
  • Add all the wet ingredients.
  • Bake in a greased 8 x 8 pan for 25-30 minutes.
  • Cool before cutting.
