- 23 cup dark cocoa
- 1 12 cups sugar
- 12 cup confectioners' sugar
- 34 teaspoon salt
- 1 teaspoon xanthan gum
- 34 cup rice flour
- 2 tablespoons potato starch
- 2 tablespoons tapioca flour
- 1 tablespoon espresso powder
- 1 cup chocolate chips
- 3 large eggs
- 12 cup canola oil
- 2 tablespoons water or 2 tablespoons coffee
Method
- Preheat oven to 350F.
- Mix all of the dry ingredients.
- Add all the wet ingredients.
- Bake in a greased 8 x 8 pan for 25-30 minutes.
- Cool before cutting.
