Ingredients

  • 2 lb. dates
  • 1 lb. candied cherries
  • 1 c. flour
  • 2 tsp. baking powder
  • 4 eggs
  • 4 c. pecans
  • 1 tsp. vanilla
  • 1 c. sugar
  • 1 tsp. salt

Method

  • Dates,
  • nuts and cherries may be left whole if desired. Sift dry ingredients together 3 times, sifting over fruit and nut mixture

  • Add beaten yolks.
  • Fold or work stiffly beaten
  • egg
  • whites
  • to which vanilla has been added. Let
  • stand for thirty minutes and mix again.
  • Use heavy waxed paper, grease and
  • line pan.
  • Cover top of cake and place pan of water
  • under cake.
  • Bake at 250° for over 2 hours.
  • Remove cover
  • from
  • top
  • of cake
  • during
  • last 15 minutes of baking. After
  • cake is removed from oven, cool thoroughly in the paper in which
  • it
  • was baked. Then wrap securely in a second layer of heavy paper (waxed paper is preferred) and tie with twine.
