Ingredients
- 2 to 2 1/2 c. flour
- 1/2 tsp. baking soda
- 2 tsp. sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 2 tsp. margarine or butter
- 2 c. buttermilk
- 3 egg yolks
- 3 egg whites, beaten until foamy
Method
- In a large mixing bowl, combine all of the ingredients but the egg whites; mix well.
- Fold egg whites into the batter.
- Heat Abelskivers pan until a drop of water will sizzle in it.
- Put 1/2 teaspoon melted butter in each cup.
- Fill each compartment 1/2 full.
- Cook until lightly brown.
- Turn dough once and cook other side.
- Serve with maple syrup, butter, powdered sugar or jelly.
