Ingredients

  • 2 to 2 1/2 c. flour
  • 1/2 tsp. baking soda
  • 2 tsp. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. margarine or butter
  • 2 c. buttermilk
  • 3 egg yolks
  • 3 egg whites, beaten until foamy

Method

  • In a large mixing bowl, combine all of the ingredients but the egg whites; mix well.
  • Fold egg whites into the batter.
  • Heat Abelskivers pan until a drop of water will sizzle in it.
  • Put 1/2 teaspoon melted butter in each cup.
  • Fill each compartment 1/2 full.
  • Cook until lightly brown.
  • Turn dough once and cook other side.
  • Serve with maple syrup, butter, powdered sugar or jelly.
