Ingredients

  • 1 c. soft bread crumbs (about 2 slices bread)
  • 1 (28 oz.) jar None Such ready-to-use mincemeat
  • 1 1/2 lb. lean ground beef
  • 1 egg
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. vegetable oil
  • 1 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 tsp. curry powder
  • 1/2 c. ReaLemon lemon juice from concentrate
  • hot cooked rice

Method

  • In a medium bowl combine crumbs, 2/3 cup mincemeat, meat, egg, salt and pepper.
  • Mix well.
  • Shape into 1 1/2-inch meatballs.
  • In a large skillet, brown meatballs in oil; remove as browned.
  • In same skillet, cook onion and green pepper until tender.
  • Add remaining mincemeat, curry and ReaLemon.
  • Mix well.
  • Return meatballs to skillet.
  • Cover; simmer 30 minutes, stirring occasionally.
  • Serve with rice.
