Ingredients

  • 1 lb. chicken, cooked and cubed
  • 10 oz. couscous, cooked and cooled
  • 1 red pepper, diced
  • 1 c. shredded carrot
  • 1 c. cooked peas
  • 1/2 c. green onions, chopped
  • 1/3 c. raisins
  • 1/3 c. orange juice
  • 1/3 c. red wine vinegar
  • 3 or more tsp. curry (to taste)
  • 1 tsp. Dijon mustard
  • 1/2 c. oil
  • salt and pepper to taste

Method

  • Cook chicken; cool and dice.
  • Cook couscous and cool.
  • Combine chicken, couscous, carrots, peas, red peppers and green onions. After soaking raisins in orange juice, drain and add raisins to couscous, reserving orange juice.
  • Combine vinegar, orange juice, curry, mustard, salt and pepper.
  • Shake or blend thoroughly.
  • Add oil and blend.
  • Pour over couscous and toss.
  • Chill until serving.
