Ingredients
- 6 cucumbers, peeled and cut up
- 2 Tbsp. cream or sour cream
- salt and pepper
- 5 Tbsp. butter or margarine
- freshly chopped parsley
Method
- Place cucumbers into salted boiling water.
- Cook for 10 minutes.
- Drain.
- Melt butter and add cucumbers.
- Cook over low heat for 20 minutes, until tender.
- Before serving, add cream and parsley.
- Serves 4 to 6.
