Ingredients
- 2 large cucumbers
- 1 Tbsp. salt
- 3 Tbsp. olive oil
- 4 Tbsp. vinegar
- 1/2 tsp. freshly ground pepper
- 2 Tbsp. minced parsley
Method
- Wash cucumbers and peel; slice very thin.
- Place in glass or china bowl; sprinkle with salt.
- Let stand 1 hour or longer. Squeeze liquid out of cucumbers.
- Combine remaining ingredients; pour over cucumbers.
- Mix and serve.
- Serves 4.
