Ingredients

  • 1 qt. lime-flavored gelatin
  • 1 tsp. salt
  • 3 qt. hot water (140 degrees F to 160 degrees F)
  • 1/4 cup lime zest Safeway 3 ct For $1.00 thru 02/09
  • 1/4 cup fresh lime juice
  • 2 cups sour cream
  • 2 cups KRAFT MAYO Real Mayonnaise
  • 1-1/2 qt. English cucumbers, chopped
  • 1/2 cup onions, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 1/4 cup fresh mint, chopped

Method

  • Mix dry gelatin mix and salt in large bowl.
  • Gradually add hot water, stirring constantly until gelatin is completely dissolved.
  • Stir in lime zest and juice.
  • Refrigerate 1-1/2 hours or until slightly thickened.
  • Add sour cream and mayonnaise; mix well.
  • Stir in remaining ingredients.
  • Pour into 2 full-hotel pans (or into 1 half-hotel pan for trial recipe).
  • Refrigerate several hours or until firm.
