Ingredients

  • olive oil, 2 tbsp
  • garlic, 1 tbsp minced
  • ginger, 1tbsp, minced
  • coriander, 1tbsp fresh cracked seed
  • mustard seeds, 1tbsp
  • cinnamon, 1 tpsp crushed stick
  • salt, Kosher, to taste
  • skirt steak, 2 lb. cut into 8-oz. portions

Method

  • Heat oil in a medium saute pan over medium heat till hot but not smoking.
  • Add ginger & garlic. Saute 1 minute.
  • Add Coriander, cumin,mustard, chile powder, cinnamon and cook, stirringtill spices begin to darken and raise strong aroma (2-3 minutes). Remove from heat.
  • When cool, sprinkle steak with salt then rub all over with spices, pressing to adhere.
  • Grill directly over the heat 4-5 minutes each side for medium rare.
  • Slice thinly across the grain and serve.
