Ingredients

  • 3/4 c. brown sugar
  • 1/2 c. whole wheat flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 (13 oz.) evaporated skim milk
  • 1 tsp. cinnamon
  • 3 egg whites, beaten until stiff peaks form
  • 1/2 tsp. nutmeg
  • 2 tsp. vanilla
  • 16 oz. can pumpkin
  • 1 tsp. allspice

Method

  • Preheat oven to 350°.
  • Grease a 10 x 1 1/2-inch pie plate with a little oil.
  • Combine all ingredients, except egg whites.
  • Blend until smooth.
  • Fold in egg whites.
  • Pour into pie plate.
  • Bake for 45 to 50 minutes or until knife inserted in center comes out clean.
