- 1 potato
- 4 ounces pork
- 12 egg
- 1 tablespoon sage and onion prepared stuffing
- 1 tablespoon oil
- 1 onion
Method
- Peel the potatoes, cut them in quarters and cook in boiling salted water for 15 minutes, until soft.
- Flatten the pork as best you can and, if the pieces are large, cut them into portions.
- Beat the egg.
- Dip the pork pieces into the egg, and then toss them in the dry stuffing or porridge oats to coat the meat thoroughly.
- Heat the oil in a frying pan.
- Put the pork pieces carefully into the hot fat and fry both sides of the pork over a medium heat, until brown and cooked right through (about 15 minutes).
- Put the pork onto a hot dish and keep warm.
- Drain the potato when cooked.
- Cut into dice.
- Peel and chop the onion and cook in the fat in the frying pan.
- Add the diced potato and continue cooking until just turning brown and crispy, stirring occasionally.
- Sprinkle the onion and potatoes over the meat, and serve hot.
