Ingredients

  • 1 potato
  • 4 ounces pork
  • 12 egg
  • 1 tablespoon sage and onion prepared stuffing
  • 1 tablespoon oil
  • 1 onion

Method

  • Peel the potatoes, cut them in quarters and cook in boiling salted water for 15 minutes, until soft.
  • Flatten the pork as best you can and, if the pieces are large, cut them into portions.
  • Beat the egg.
  • Dip the pork pieces into the egg, and then toss them in the dry stuffing or porridge oats to coat the meat thoroughly.
  • Heat the oil in a frying pan.
  • Put the pork pieces carefully into the hot fat and fry both sides of the pork over a medium heat, until brown and cooked right through (about 15 minutes).
  • Put the pork onto a hot dish and keep warm.
  • Drain the potato when cooked.
  • Cut into dice.
  • Peel and chop the onion and cook in the fat in the frying pan.
  • Add the diced potato and continue cooking until just turning brown and crispy, stirring occasionally.
  • Sprinkle the onion and potatoes over the meat, and serve hot.
