Ingredients

  • 1 pound skinless chicken breast cubed
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1-1/2 cups water
  • 1 can 15oz garbanzo beans rinsed & drained
  • 1 can 11oz whole kernel white corn drained
  • 1 can 4 oz chopped green chiles
  • 2 teaspoons chicken bouillion granules
  • 1 teaspoon cumin
  • 1 can Cream of Chicken Soup (lowfat)
  • 1 can Whole Kidney / Cannelinii bean drained

Method

  • In a large non-stick skillet, saute chicken, onion and garlic until onion is tender. Transfer to crock pot sprayed with PAM. Stir in remaining ingredients except for chicken soup. Cook on low for 6 hours. Add chicken soup and let heat through and serve with scallions, cheese, sour cream.
