- 1 pound skinless chicken breast cubed
- 1 medium onion chopped
- 1 clove garlic minced
- 1-1/2 cups water
- 1 can 15oz garbanzo beans rinsed & drained
- 1 can 11oz whole kernel white corn drained
- 1 can 4 oz chopped green chiles
- 2 teaspoons chicken bouillion granules
- 1 teaspoon cumin
- 1 can Cream of Chicken Soup (lowfat)
- 1 can Whole Kidney / Cannelinii bean drained
Method
- In a large non-stick skillet, saute chicken, onion and garlic until onion is tender. Transfer to crock pot sprayed with PAM. Stir in remaining ingredients except for chicken soup. Cook on low for 6 hours. Add chicken soup and let heat through and serve with scallions, cheese, sour cream.
