Ingredients

  • 1 whole chicken about 8 lbs, halved
  • 2 tablespoons peanut oil
  • 1 clove clove crushed
  • 1 tablespoon szechwan peppercorns crushed
  • 1/2 teaspoon cracked black pepper
  • greens stir-fried Asian, to serve
  • steamed rice to serve

Method

  • Preheat oven to 400°F. Place chicken halves in a large baking dish, skin side up. In a small bowl, combine oil and garlic. Brush mixture on chicken and sprinkle with peppercorns and sea salt. Bake 1 hour, until chicken is crisp and cooked through. Using a cleaver or sharp knife, cut into pieces. Serve with Asian greens and steamed rice.
