Ingredients
- 1 whole chicken about 8 lbs, halved
- 2 tablespoons peanut oil
- 1 clove clove crushed
- 1 tablespoon szechwan peppercorns crushed
- 1/2 teaspoon cracked black pepper
- greens stir-fried Asian, to serve
- steamed rice to serve
Method
- Preheat oven to 400°F. Place chicken halves in a large baking dish, skin side up. In a small bowl, combine oil and garlic. Brush mixture on chicken and sprinkle with peppercorns and sea salt. Bake 1 hour, until chicken is crisp and cooked through. Using a cleaver or sharp knife, cut into pieces. Serve with Asian greens and steamed rice.
