Ingredients
- 4 small boneless skinless chicken breast halves (1 lb.)
- 1 egg, beaten
- 12 saltine crackers, finely crushed (about 1/2 cup)
- 2 tablespoons butter, melted
- 1 cup salsa
- 1 cup mexican style finely shredded cheese
Method
- HEAT oven to 425 degrees F.
- DIP chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece.
- PLACE in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.
- BAKE 20 minute or until chicken is done (165 degrees F).
- Top with salsa and cheese; bake 5 minute or until cheese is melted.
