Ingredients

  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 1 egg, beaten
  • 12 saltine crackers, finely crushed (about 1/2 cup)
  • 2 tablespoons butter, melted
  • 1 cup salsa
  • 1 cup mexican style finely shredded cheese

Method

  • HEAT oven to 425 degrees F.
  • DIP chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece.
  • PLACE in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.
  • BAKE 20 minute or until chicken is done (165 degrees F).
  • Top with salsa and cheese; bake 5 minute or until cheese is melted.
