Ingredients
- 2 large Spanish onions (about 1 3/4 lb.)
- 1 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. pepper
- 3/4 c. beer
- 1 large egg, beaten
- vegetable oil
Method
- Peel onions; cut into 1/2-inch thick slices and separate into rings.
- Place in a bowl; add cold water to cover.
- Chill for 1 hour.
- Drain on paper towels.
- Combine flour and next 4 ingredients; stir well.
- Add beer and egg, stirring with a wire whisk until smooth.
- Pour oil to depth of 3 inches in Dutch oven. Heat to 375°.
- Dip onion rings into batter; fry, a few at a time, for 3 minutes or until golden.
- Drain on paper towels.
- Yields 6 servings.
