Ingredients

  • 2 large Spanish onions (about 1 3/4 lb.)
  • 1 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 3/4 c. beer
  • 1 large egg, beaten
  • vegetable oil

Method

  • Peel onions; cut into 1/2-inch thick slices and separate into rings.
  • Place in a bowl; add cold water to cover.
  • Chill for 1 hour.
  • Drain on paper towels.
  • Combine flour and next 4 ingredients; stir well.
  • Add beer and egg, stirring with a wire whisk until smooth.
  • Pour oil to depth of 3 inches in Dutch oven. Heat to 375°.
  • Dip onion rings into batter; fry, a few at a time, for 3 minutes or until golden.
  • Drain on paper towels.
  • Yields 6 servings.
