Ingredients
- 1 lb. pinto beans, soaked overnight
- 1 large onion, chopped
- 1 green pepper, chopped
- 2 cloves garlic, chopped
- 1 1/2 lb. sausage (hot smoked)
- ham hock to taste
- parsley to taste
- salt and red and black peppers to taste
Method
- Soak beans overnight; add onion, green pepper and garlic. Boil 1/2 hour, then lower to simmer.
- Cook sausage in a bit of water 15 minutes to draw out most of the fat.
- Add to beans.
- Add remaining ingredients.
- Slowly cook for 2 or 3 hours.
- Add water if needed.
- If you want real thick gravy, crush lots of beans after they begin to fall apart.
- Serve over rice.
