Ingredients
- 3 (10 ounce) packages frozen chopped spinach
- 12 lb fresh mushrooms, chopped
- 3 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 1 teaspoon salt
- 12 teaspoon ground nutmeg
- 34 cup feta cheese
Method
- Lightly grease a shallow 2-qt.
- casserole.
- preheat oven to 325F.
- Cook spinach according to package directions.Drain and press out all the water and set aside.
- Melt 1 tablespoon of the butter in a pan and cook mushrooms till lightly brown.
- 6-8 minutes stir often.set aside.
- In a medium saucepan melt the remaining 2 tablespoon butter, stir in flour cook stiring for 1 min.,add milk salt and nutmeg stirring over medium heat approximately 5-6 minutes till thickened.
- combine spinach, mushrooms and sauce in the prepared casserole.Top with feta cheese and bake uncovered for 25-30 minutes.
