Ingredients

  • 3 (10 ounce) packages frozen chopped spinach
  • 12 lb fresh mushrooms, chopped
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • 12 teaspoon ground nutmeg
  • 34 cup feta cheese

Method

  • Lightly grease a shallow 2-qt.
  • casserole.
  • preheat oven to 325F.
  • Cook spinach according to package directions.Drain and press out all the water and set aside.
  • Melt 1 tablespoon of the butter in a pan and cook mushrooms till lightly brown.
  • 6-8 minutes stir often.set aside.
  • In a medium saucepan melt the remaining 2 tablespoon butter, stir in flour cook stiring for 1 min.,add milk salt and nutmeg stirring over medium heat approximately 5-6 minutes till thickened.
  • combine spinach, mushrooms and sauce in the prepared casserole.Top with feta cheese and bake uncovered for 25-30 minutes.
