Ingredients
- 1 14 cups water
- 34 cup short-grain rice (Arborio or Italian style)
- 12 cup granulated sugar
- 2 (370 ml) canscarnation fat-free evaporated milk
- 2 cups water
- 14 cup raisins
- 1 teaspoon vanilla
- 1 tablespoon cinnamon
Method
- Bring water to a boil in a large saucepan.
- Add rice, stir to combine.
- Cover.
- Bring back to a boil, reduce heat and simmer for 15 minutes or until water is absorbed.
- Add sugar, evaporated milk, water and raisins.
- Stirring, bring to a boil.
- Cover, reduce heat to low simmer and cook for 1 - 1/2 hours, or until mixture is very creamy.
- Stir occasionally.
- Remove from heat and stir in vanilla.
- Transfer to a serving bowl and sprinkle with cinnamon.
- Delicious hot or cold.
