Ingredients

  • 1 14 cups water
  • 34 cup short-grain rice (Arborio or Italian style)
  • 12 cup granulated sugar
  • 2 (370 ml) canscarnation fat-free evaporated milk
  • 2 cups water
  • 14 cup raisins
  • 1 teaspoon vanilla
  • 1 tablespoon cinnamon

Method

  • Bring water to a boil in a large saucepan.
  • Add rice, stir to combine.
  • Cover.
  • Bring back to a boil, reduce heat and simmer for 15 minutes or until water is absorbed.
  • Add sugar, evaporated milk, water and raisins.
  • Stirring, bring to a boil.
  • Cover, reduce heat to low simmer and cook for 1 - 1/2 hours, or until mixture is very creamy.
  • Stir occasionally.
  • Remove from heat and stir in vanilla.
  • Transfer to a serving bowl and sprinkle with cinnamon.
  • Delicious hot or cold.
