Ingredients
- 2/3 c. quick cooking rice
- 1/4 tsp. salt
- 1/4 c. raisins
- 1 (3 1/4 oz.) pkg. vanilla pudding mix
- 4 c. milk
- 1/3 c. sugar
- 1 egg, well beaten
- 1/4 tsp. each: vanilla and cinnamon
- 1/8 tsp. nutmeg
Method
- Combine all ingredients, except vanilla, cinnamon and nutmeg; place in saucepan.
- Cook and stir over medium heat until mixture comes to full boil, about 8 to 10 minutes.
- Remove from heat; cool 5 minutes, stirring once or twice.
- Add vanilla.
- Pour into serving bowl.
- Sprinkle with cinnamon and nutmeg.
- Serve warm with cream, if desired.
- Makes 8 servings.
