Ingredients

  • 2/3 c. quick cooking rice
  • 1/4 tsp. salt
  • 1/4 c. raisins
  • 1 (3 1/4 oz.) pkg. vanilla pudding mix
  • 4 c. milk
  • 1/3 c. sugar
  • 1 egg, well beaten
  • 1/4 tsp. each: vanilla and cinnamon
  • 1/8 tsp. nutmeg

Method

  • Combine all ingredients, except vanilla, cinnamon and nutmeg; place in saucepan.
  • Cook and stir over medium heat until mixture comes to full boil, about 8 to 10 minutes.
  • Remove from heat; cool 5 minutes, stirring once or twice.
  • Add vanilla.
  • Pour into serving bowl.
  • Sprinkle with cinnamon and nutmeg.
  • Serve warm with cream, if desired.
  • Makes 8 servings.
