Ingredients
- 1 carrot, diced small
- 2 Tbsp. finely chopped onion
- 1 stalk finely chopped celery
- 2 Tbsp. butter
- 2 c. cubed, raw potatoes
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 can undiluted Carnation evaporated milk
Method
- Combine ingredients in saucepan and cook on medium heat until potatoes are tender.
- Then add the can of evaporated milk.
- Serve hot, garnished with parsley, if desired.
