Ingredients

  • 2 Tbsp. butter
  • 1 onion, chopped
  • 3 potatoes, diced small
  • 2 c. hot light cream
  • 2 c. hot milk
  • 1/4 lb. mushrooms, diced
  • 1 lb. frozen lobster meat, diced
  • 1 Tbsp. chives, chopped
  • salt and pepper
  • dash of paprika

Method

  • Heat butter.
  • When hot, add onion.
  • Cover and cook 2 minutes over medium heat.
  • Add potatoes and season well.
  • Pour in cream and milk; season again.
  • Bring to boil and cook 10 minutes over low heat.
  • Add mushrooms and continue cooking.
  • Stir in lobster and simmer 3 to 4 minutes over low heat.
  • Sprinkle with chives and paprika before serving.
