Ingredients

  • 4 lb. small new potatoes, scrubbed
  • salt
  • 1/4 c. fresh lime juice
  • 3/4 tsp. grated lime peel
  • 1 tsp. cumin
  • 1/2 tsp. freshly ground pepper
  • 1/2 c. minced red onion
  • 1 (8 oz.) container plain low-fat yogurt
  • 1/2 c. mayonnaise (can substitute with low-fat)
  • 1/4 c. chopped fresh parsley

Method

  • Place potatoes and 1 teaspoon salt in water to cover in large saucepot.
  • Bring to boil over medium-high heat and cook until potatoes are just tender, 15 minutes.
  • Drain.
  • Cool 15 minutes.
