- 4 lb. small new potatoes, scrubbed
- salt
- 1/4 c. fresh lime juice
- 3/4 tsp. grated lime peel
- 1 tsp. cumin
- 1/2 tsp. freshly ground pepper
- 1/2 c. minced red onion
- 1 (8 oz.) container plain low-fat yogurt
- 1/2 c. mayonnaise (can substitute with low-fat)
- 1/4 c. chopped fresh parsley
Method
- Place potatoes and 1 teaspoon salt in water to cover in large saucepot.
- Bring to boil over medium-high heat and cook until potatoes are just tender, 15 minutes.
- Drain.
- Cool 15 minutes.
