Ingredients

  • 1-1/2 cup Orzo
  • 1 Tablespoon Butter
  • 1-1/2 teaspoon Thyme, Fresh
  • 1 teaspoon Rosemary, Chopped
  • 2 cups Chicken Stock
  • 1/2 cups Water
  • 1 whole Lemon, Zest And Half The Juice
  • 1/2 teaspoons Salt
  • Pepper
  • 1/4 cups Grated Parmesan Cheese (optional)

Method

  • Saute the orzo in a saucepan in butter over medium high heat. Stir until lightly browned and add in the remaining ingredients, except the cheese.
  • Bring to a boil and cover. Reduce the heat to low and cook for about 15 minutes or until the liquid is absorbed, stirring every so often.
  • Remove from the heat and let stand for 5 minutes. Stir in the cheese, season to taste, and serve.
  • Note: if you want to make this vegetarian, use vegetable stock or water in place of the chicken stock.
