Ingredients
- 4 Russet potatoes
- 4 heaping Tbsp. shredded cheese
- bacon bits (optional)
- 2 Tbsp. butter
- light cream
Method
- Bake potatoes at 350° for 1 to 1 1/2 hours, depending on size. (Don't forget to prick with fork so they won't explode.)
- Cut in half lengthwise.
- Scoop out potatoes and mash with butter and enough light cream to make fluffy.
- Restuff shells and top with cheese and bacon bits.
- Return to oven and bake until cheese melts.
