Ingredients

  • 4 Russet potatoes
  • 4 heaping Tbsp. shredded cheese
  • bacon bits (optional)
  • 2 Tbsp. butter
  • light cream

Method

  • Bake potatoes at 350° for 1 to 1 1/2 hours, depending on size. (Don't forget to prick with fork so they won't explode.)
  • Cut in half lengthwise.
  • Scoop out potatoes and mash with butter and enough light cream to make fluffy.
  • Restuff shells and top with cheese and bacon bits.
  • Return to oven and bake until cheese melts.
