Ingredients
- 1 lb. young zucchini, sliced
- 2 Tbsp. butter or oleo
- 2 Tbsp. finely chopped onion
- 1 large clove garlic, chopped
- 1 tsp. curry powder
- 1 3/4 c. chicken broth
- 1/2 c. cream or milk
Method
- Saute oleo or butter, onion and garlic.
- Add zucchini and cook until soft.
- Put in blender and add remaining ingredients;
- blend on high until smooth.
- Add salt to taste.
- Serve heated or cold.
