Ingredients
- 1 lb. mushrooms
- 1 small onion, chopped
- 1/4 c. butter or margarine
- 1/4 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 c. milk (some cream can be substituted)
- 1/4 c. sherry
- 1/2 c. chicken stock
Method
- Chop mushrooms, including stems; saute with onion in butter or margarine for 10 minutes.
- Blend in flour, salt and pepper. Stirring constantly, add milk and chicken stock.
- Cook until thick.
- Add sherry just before serving.
- Serves 6.
