Ingredients

  • 1 (10 oz.) box frozen chopped broccoli
  • 1 1/2 c. boiling water
  • 1/2 tsp. salt
  • 1/2 c. chopped onion
  • 3 Tbsp. butter
  • 1 (13 3/4 oz.) can chicken broth
  • 1 c. light cream
  • 1/2 c. Velveeta cheese, grated
  • 1 envelope Herb-Ox chicken broth

Method

  • Cook broccoli in water and salt until tender.
  • Saute onion in butter until transparent.
  • Add onion to broccoli and mash.
  • Add chicken broth, cream and cheese.
  • Mix well.
  • Heat, but do not boil.
  • Serves 5.
  • May thicken with cornstarch/water.
