Ingredients
- 1 lb. fresh broccoli
- 1 c. flour
- 1 qt. half and half cream
- 1 tsp. salt
- pepper to taste
- 8 oz. butter
- 1 qt. chicken stock
- 1 (6 oz.) jar sliced mushrooms (optional)
Method
- Clean broccoli and cut into 1/2 inch pieces.
- Steam in 1/2 cup water until tender.
- Do not drain; set aside.
- Melt butter in large pan over medium heat.
- Add flour, stirring constantly, to make sauce.
- Cook 2 to 4 minutes.
- Add chicken stock; still stirring, bring to a boil.
- Turn heat on low.
- Add broccoli, half and half, salt and pepper.
- Heat slowly; do not let boil again.
- Serves 8.
