Ingredients

  • 1 lb. fresh broccoli
  • 1 c. flour
  • 1 qt. half and half cream
  • 1 tsp. salt
  • pepper to taste
  • 8 oz. butter
  • 1 qt. chicken stock
  • 1 (6 oz.) jar sliced mushrooms (optional)

Method

  • Clean broccoli and cut into 1/2 inch pieces.
  • Steam in 1/2 cup water until tender.
  • Do not drain; set aside.
  • Melt butter in large pan over medium heat.
  • Add flour, stirring constantly, to make sauce.
  • Cook 2 to 4 minutes.
  • Add chicken stock; still stirring, bring to a boil.
  • Turn heat on low.
  • Add broccoli, half and half, salt and pepper.
  • Heat slowly; do not let boil again.
  • Serves 8.
