Ingredients

  • 2 quarts cold cooked rice
  • 1 cup salad oil
  • 1 lb cabbage, chunked
  • 12 cup shredded carrot
  • 1 cup diced onion
  • 12 cup diced celery
  • 12 cup diced bell pepper
  • 1 red bell pepper, diced
  • 12 cup chopped scallion (tops)
  • 12 cup chopped scallion (white part)
  • 1 tablespoon minced garlic
  • 10 ounces ham, cubed
  • 10 ounces chicken, cubed
  • 8 ounces andouille cajun sausage, cubed
  • 12 cup soy sauce
  • 1 cup peas
  • 1 tablespoon cajun seasoning
  • 1 teaspoon black pepper
  • 2 teaspoons salt

Method

  • In a large pot of hot oil, lightly cook all the meats and vegetables (except peas) over high heat, stirring often.
  • Add seasoning and peas.
  • Simmer 4-5 minutes.
  • Saute cold rice with a little salad oil.
  • Add fried rice garnish.
  • Fry and stir well.
