- 2 quarts cold cooked rice
- 1 cup salad oil
- 1 lb cabbage, chunked
- 12 cup shredded carrot
- 1 cup diced onion
- 12 cup diced celery
- 12 cup diced bell pepper
- 1 red bell pepper, diced
- 12 cup chopped scallion (tops)
- 12 cup chopped scallion (white part)
- 1 tablespoon minced garlic
- 10 ounces ham, cubed
- 10 ounces chicken, cubed
- 8 ounces andouille cajun sausage, cubed
- 12 cup soy sauce
- 1 cup peas
- 1 tablespoon cajun seasoning
- 1 teaspoon black pepper
- 2 teaspoons salt
Method
- In a large pot of hot oil, lightly cook all the meats and vegetables (except peas) over high heat, stirring often.
- Add seasoning and peas.
- Simmer 4-5 minutes.
- Saute cold rice with a little salad oil.
- Add fried rice garnish.
- Fry and stir well.
