- 1 lb. crawfish tails and fat
- 1 1/2 sticks margarine
- 2 Tbsp. flour
- 1 medium onion, chopped
- 2 to 3 pods garlic
- 1 Tbsp. bell pepper
- 4 to 6 green onions, chopped
- parsley to taste
- salt and pepper to taste
- cayenne pepper to taste
- 2 c. water
Method
- Melt margarine.
- Add flour; stir until blended.
- Add onion, bell pepper and garlic and cook until tender.
- Add crawfish tails, fat and water.
- Cook 10 minutes, then cover.
- Cook another 15 minutes, stirring occasionally.
- Add salt, pepper, green onions and parsley.
- Cook on simmer until thickness desired.
