Ingredients

  • 1 lb. crawfish tails and fat
  • 1 1/2 sticks margarine
  • 2 Tbsp. flour
  • 1 medium onion, chopped
  • 2 to 3 pods garlic
  • 1 Tbsp. bell pepper
  • 4 to 6 green onions, chopped
  • parsley to taste
  • salt and pepper to taste
  • cayenne pepper to taste
  • 2 c. water

Method

  • Melt margarine.
  • Add flour; stir until blended.
  • Add onion, bell pepper and garlic and cook until tender.
  • Add crawfish tails, fat and water.
  • Cook 10 minutes, then cover.
  • Cook another 15 minutes, stirring occasionally.
  • Add salt, pepper, green onions and parsley.
  • Cook on simmer until thickness desired.
