Ingredients

  • 1/4 c. non-fat dry lowfat milk
  • 1/4 c. ice water
  • 1/2 c. raisins
  • 1/2 c. water
  • 1/2 c. butter
  • 1/2 c. brown sugar
  • 1 egg
  • 1 c. flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 c. rolled oats
  • 1/2 teaspoon salt

Method

  • Whip dry lowfat milk in ice water till stiff (4 to 5 min).
  • Boil raisins in water for 2 min, drain.
  • Reserve liquid for later use.
  • Combine butter, sugar, egg and vanilla; beat 1 minute at medium speed.
  • Sift together dry ingredients; add in liquid from raisins, add in dry ingredients.
  • Beat 2 min at low speed.
  • Stir in rolled oats and raisins, mix in lowfat milk.
  • Drop from tsp.
  • 2 inches apart on ungreased cookie sheet.
  • Bake at 350 degrees for 15 to 20 min.
