Ingredients
- 3 c. fresh or frozen cranberries
- 3/4 c. chopped walnuts
- 1/4 c. raisins
- 1 c. sugar
- 1 large egg
- 1/2 c. all-purpose flour
- 1/3 c. lightly salted butter or margarine, melted
Method
- Heat oven to 325°. Grease a 9-inch pie plate or fluted quiche dish.
- Add cranberries and sprinkle with nuts, raisins and 3/4 cup sugar.
- In a medium size bowl, beat egg with the remaining 1/4 cup sugar.
- Add flour and butter.
- Beat until no lumps remain.
- Pour over berry mixture and bake 45 minutes until crust is a light golden brown.
- Makes 8 to 10 servings.
