- 1 cup All-purpose Flour
- 1/2 cups Whole Wheat Pastry Flour
- 1/2 cups Sugar
- 2-1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1/2 cups Egg Substitute Or 2 Eggs
- 1/2 cups Unsweetened Applesauce
- 1 teaspoon Orange Extract
- 1/2 teaspoons Vanilla Extract
- 1 Tablespoon Orange Zest
- 1 cup Mashed Banana (for 1 Cup You'll Need Approximately 3 Medium Sized Bananas)
- 1 cup Cranberries, Fresh, Cut In Half
Method
- 1. In a large bowl, mix together the flours, sugar, baking powder and salt until well combined. Set aside.
- 2. In a separate bowl, mix eggs, applesauce, orange extract, vanilla extract, orange zest and bananas.
- 3. Stir banana mixture into the flour mixture. Then add cranberries.
- 4. Stir carefully.
- 5. Pour the batter into a greased loaf pan and bake for approximately one hour at 350°F. Or you can use 3 mini loaf pans and bake for 30 minutes.
- 6. Bread is done when a toothpick inserted into the loaf comes out clean.
- Makes 18 slices, approximately 6 slices per mini loaf.
