Ingredients

  • 2 c. flour
  • 1/2 tsp. salt
  • 1 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. sugar
  • juice of 1 orange
  • chopped rind of 1 orange
  • 2 Tbsp. shortening
  • boiling water
  • 1 egg
  • 1 c. chopped cranberries
  • 1 c. chopped nuts

Method

  • Preheat oven to 350°.
  • Grease and flour 2 loaf pans.
  • Sift dry ingredients together in a large bowl.
  • Put orange juice and grated rind into a large measuring cup.
  • Add shortening.
  • Then pour boiling water up to the 3/4 mark in the measuring cup.
  • Lightly beat 1 egg and add to dry ingredients.
  • Add liquid ingredients and stir.
  • Mix in cranberries and nuts.
  • Bake 1 hour.
  • Makes 2 loaves.
