Ingredients

  • 2 c. flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. sugar
  • 1 egg, slightly beaten
  • 2 Tbsp. vegetable oil
  • 1/3 c. orange juice
  • 1/3 c. boiling water
  • 1 c. cranberries, cut in half
  • 1 c. chopped walnuts

Method

  • Add 2 tablespoons oil to orange juice and boiling water; let stand.
  • Mix together dry ingredients.
  • Add egg; mix slightly.
  • Add liquid mixture; mix again.
  • Add nuts and cranberries; mix and pour into greased loaf pan.
  • Bake at 350° for 50 to 60 minutes.
