Ingredients

  • 3/4 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 2 c. whole, fresh cranberries
  • 1 c. dates, chopped
  • 3 1/2 c. nuts
  • 2 eggs
  • 3/4 c. sugar
  • 1 tsp. lemon extract

Method

  • Mix together in a large bowl the flour, salt and baking powder. Add cranberries, dates and chopped nuts.
  • Toss until fruit and nuts are evenly coated with flour mixture.
  • Beat in small bowl until light and fluffy the eggs, sugar and lemon extract.
  • Pour over fruit and nut mixture.
  • Mix thoroughly to coat fruit and nuts.
  • Use small size nonstick muffin tins, dropping a heaping tablespoonful in each.
  • Bake at 350° for 15 minutes or until done.
