Ingredients
- 3/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 2 c. whole, fresh cranberries
- 1 c. dates, chopped
- 3 1/2 c. nuts
- 2 eggs
- 3/4 c. sugar
- 1 tsp. lemon extract
Method
- Mix together in a large bowl the flour, salt and baking powder. Add cranberries, dates and chopped nuts.
- Toss until fruit and nuts are evenly coated with flour mixture.
- Beat in small bowl until light and fluffy the eggs, sugar and lemon extract.
- Pour over fruit and nut mixture.
- Mix thoroughly to coat fruit and nuts.
- Use small size nonstick muffin tins, dropping a heaping tablespoonful in each.
- Bake at 350° for 15 minutes or until done.
