Ingredients

  • 2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 2 Tbsp. shortening
  • 1 c. nuts, chopped
  • 1 orange, juice and grated rind with enough boiling water to make 3/4 cup liquid
  • 1 c. sugar
  • 1 beaten egg
  • 1 c. whole fresh cranberries

Method

  • Sift together dry ingredients into bowl.
  • Add orange juice, grated rind (and water) and shortening.
  • Stir.
  • Add the beaten egg, cranberries and nuts.
  • Put in greased 9 x 5 x 3 -inch loaf pan and bake at 325° for 45 minutes to 1 hour.
