Ingredients
- 1 c. corn meal
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 egg
- 1 c. buttermilk
- 1 c. cracklings, cut into small pieces
Method
- Sift corn meal, salt and soda together over cracklings.
- Mix well.
- Combine buttermilk and beaten egg.
- Stir into corn meal mixture.
- Pour into a hot, greased bread pan.
- Bake at 450° for about 25 minutes or until brown.
- Yields 8 servings.
