Ingredients

  • 4 slices bacon, finely chopped
  • 1 cup Spanish onion, minced
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup cracked canoe lager beer
  • 1 cup havarti cheese, grated
  • 1 cup gouda cheese, grated

Method

  • Place a medium saucepot over medium heat and add the chopped bacon.
  • Render the fat from the bacon, crisping it gently.
  • Add onions to saute and the butter to melt and brown slightly.
  • Now add the flour and stir to combine and make a smooth roux.
  • Add the beer a little at a time, whisking to ensure that no lumps form.
  • Add the grated cheese until melted, transfer to a fondue pot and serve with crusty bread and sweet and sour gherkins - so delicious!
