Ingredients

  • 9 ounces couscous
  • 4 tomatoes
  • 12 cucumber
  • 6 scallions
  • 1 12 ounces parsley
  • 1 lemon, zest and juice
  • 6 tablespoons olive oil
  • 1 garlic clove, minced

Method

  • Put the couscous in a large bowl.
  • Pour over 1 1/4 cups boiling water (flavored with bouillon if you like for extra flavor).
  • Cover with plastic wrap then set aside for 10 mins while you get the rest of the ingredients ready.
  • Finely dice the tomatoes and cucumber, thinly slice the scallions and finely chop the parsley.
  • Whisk the lemon juice, oil and garlic together with some salt and pepper.
  • Fluff up the couscous with a fork, then stir through the other ingreadients and dressing.
  • Season to taste and serve.
