Ingredients
- 9 ounces couscous
- 4 tomatoes
- 12 cucumber
- 6 scallions
- 1 12 ounces parsley
- 1 lemon, zest and juice
- 6 tablespoons olive oil
- 1 garlic clove, minced
Method
- Put the couscous in a large bowl.
- Pour over 1 1/4 cups boiling water (flavored with bouillon if you like for extra flavor).
- Cover with plastic wrap then set aside for 10 mins while you get the rest of the ingredients ready.
- Finely dice the tomatoes and cucumber, thinly slice the scallions and finely chop the parsley.
- Whisk the lemon juice, oil and garlic together with some salt and pepper.
- Fluff up the couscous with a fork, then stir through the other ingreadients and dressing.
- Season to taste and serve.
