Ingredients
- 500 g (1 lb 2 oz) couscous
- 1 red onion, chopped
- 200 g (7 oz) feta cheese, diced
- 40 g (1 1/2 oz) black olives, sliced
- 2 Lebanese (short) cucumbers, peeled, seeded and chopped
- 3 very large handfuls mint, chopped
- 125 ml (4 fl oz/1/2 cup) olive oil
- 125 ml (4 fl oz/1/2 cup) lemon juice
Method
1. Prepare the couscous according to the instructions on the packet.
2. Place in a large bowl with the onion, feta cheese, olives, cucumber and mint.
3. Whisk together the olive oil and lemon juice and toss through.
