Ingredients

  • 1 box of seasoned couscous or pearl (sometimes called Israeli couscous)
  • Feta cheese
  • Sun dried tomatoes
  • 1 pound(s) green/yellow zucchini
  • 1 pound red onions
  • 1 yellow, green or orange pepper
  • 1/2 pound broccoli
  • Vegetable oil
  • Salt & Pepper
  • Corn on the Cob (optional)

Method

  • Cook one of those couscous mixes that already has a bit of seasoning.
  • Meanwhile, cut zucchini into spears, and peel onions then halve lengthwise and cut halves lengthwise into 1/2-inch-wide rings.
  • Soak toothpicks 10 minutes in water. Insert 1 wooden pick through each wedge to hold layers together, then put onions in a large bowl with zucchini and corn on the cob if taking the risk. Toss vegetables with 2 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. A little more if using corn.
  • Using a saute pan placed on aluminum foil on the grill. Heat vegetable oil then add chopped pepper(s),and broccoli and season with salt and pepper.
  • Grill zucchini and onions. And corn on the cob if using.
  • Next remove corn from the cob into dish, remove toothpicks & chop grilled red onions smaller, and add rest of vegetables. Basically whatever you really like.
  • Then crush feta cheese and sun dried tomatoes over cooked couscous.
